Berry Filled Cinnamon Pancakes

Ingredients: 

  • Crêpeaffaire Crêpe Mix 
  • ½ tbsp of oil for frying 
  • 60g Raspberries 
  • 60g Blueberries 
  • 60g Blackberries 
  • 60g Strawberries 
  • 1 Tablespoon Granulated sugar  
  • 1 Banana 
  • 1 Tablespoon Cinnamon  

Step 1: 

Combine one part Crepeaffaire crêpe mix (150g) with two parts water (300ml). Mix as fast as you can until there’s no lumps. Pour a spoonful of batter into a hot + well-greased pan, tilting to coat the entire pan. 

Step 2: 

Put all the fruit into a saucepan over medium-low heat with the sugar and cinnamon. Cook 4 minutes or until thoroughly heated, stirring occasionally. 

Step 3: 

Place one crepe on a plate and put a big spoonful of the fruit mixture in the centre of the crepe. Fold bottom edge of crepe (closest to you) over fruit, fold in both sides of crepe over fruit. Arrange seam sides up, on plate.  

Step 4: 

Whipped cream or ice cream optional but advised!
